Lemon Fudge

I don't know when this began, yet as far back as having babies I simply get these desires for citrus. Like lemon in my water. Or then again squeezed orange. Or then again lemon bars. Perhaps I'm only insufficient in nutrient C.

In any case, of late I've been in the mind-set for lemon-something. At that point a few days ago I saw a formula for lemon fudge on Pinterest some time back, so I found it.

In any case, I read through a few distinctive lemon fudge formulas, and . . . I simply didn't care for them. It is possible that they called for stuff I didn't have close by, or they appeared to be excessively muddled, or they needed to set up more than 4-6 hours. Better believe it, that wasn't working for me. I needed lemon fudge, presently.

I need to state, I cherish that white chocolate fudge formula. You could most likely do a wide range of things with it other than just lemon, and it's one of those fudge formulas that is difficult to fail.

So I changed a couple of things and transformed it into lemon fudge! It turned out quite great, so I thought I'd share my little adjustment here.

Lemon Fudge


Lemon Fudge is one of my very favorite candies to make and share during the holidays! Well, I love it in the spring too!

INGREDIENTS
  • 1 1/2 cups sugar
  • 2/3 cups whole milk or cream
  • 1/2 stick of butter
  • 2-3 drops yellow food coloring (if desired)
  • 10 oz. white chocolate chips
  • 1 tbsp. lemon flavoring
  • 1 tsp. lemon zest (optional)

INSTRUCTIONS
  1. Grease a small plate or pan with butter or cooking spray, and set aside.  
  2. Mix together sugar, milk, butter, and food coloring in medium-sized pan.  Bring mixture to a boil over medium-high heat.
  3. Boil for 5 minutes without stirring.  Actually I boiled it for 6 minutes the first time and it set up right away but it was a little riskier.  If you want to be safe just do 5 minutes and then expect it to take longer to completely set.
  4. Remove from heat and stir until smooth.  Stir in white chocolate chips until melted. Stir in lemon flavoring (you might have to do this to taste, because if your fudge is still hot some of the flavoring will burn off).  Stir in lemon zest if desired.
  5. Spread in prepared dish.
  6. Now go lick the pan while you wait for the fudge to set up.
